Pickle Plant Machinery β Washing, Cutting, Mixing & Filling Line

Short answer: a pickle line needs a washing machine, a cutting machine, a mixing machine, a filling machine, a foil sealing machine, and labelling with MRP and batch coding. Between cutting and mixing there is a curing step with no machine attached to it, and it is the difference between pickle that keeps for a year and pickle that grows fungus in six weeks.
The one thing that spoils pickle: water
Everything in a pickle unit comes back to moisture control. Pickle is preserved by salt, acid and oil β not by refrigeration. Water left anywhere in the process dilutes the salt, thins the oil barrier and gives mould exactly what it needs.
Three rules that follow, and they cost nothing to apply:
- Cut vegetables must be surface-dry before they meet oil. After washing, drain and dry properly.
- Every vessel, jar and spoon must be bone dry. A single wet jar ruins the pack that goes into it.
- Oil must cover the pickle completely. The oil layer is a physical barrier against air. Any piece sticking above the oil is where the fungus starts.
The machines you need
1. Pickle washing machine
Mango, lemon, chilli, carrot, garlic and amla all arrive with field soil. A bubble washer agitates with air so produce tumbles clean without bruising. For continuous throughput an automatic conveyor washer washes and delivers to the cutting stage.
Sort on an SS working table. Any piece that is soft, bruised or damaged goes out β it will not survive a year in a jar, and one bad piece can spoil the pack.
Then dry the washed produce before cutting. Traditionally this is sun-drying for a few hours; a tray dryer does it under control, without depending on the weather or exposing the produce to dust.
2. Pickle cutting machine
Uniform pieces matter more than they look. Even sizing means the salt and masala penetrate evenly, every jar looks the same, and your fill weights stay consistent.
A fruits and vegetables cutter handles slicing, dicing and shredding with interchangeable blades β this is the workhorse for mixed vegetable, carrot and mango pickle. A slicer gives you consistent slices where the cut shape is part of the product.
3. Salt curing β the step with no machine
Cut produce is layered with salt and left to stand, usually two to three days. Salt draws the water out of the vegetable by osmosis. That brine is drained off β and with it goes the moisture that would otherwise have spoiled your pickle from the inside.
Skip this and no amount of oil or preservative will save the batch. Cure in food-grade containers or a SS storage tank, never in mild steel or aluminium, because the salt and acid will attack them.
Many units also give the drained pieces a further short dry before masala goes on. The drier the piece, the longer the pickle keeps.
4. Pickle mixing machine
Cured pieces, ground spices and oil are combined here. It has to be thorough β under-mixed pickle means some jars are bland and some are overpowering, and that inconsistency is what loses a distributor.
A 25 kg pickle and flour mixer is built for this job and is the standard choice for small and mid units. A masala coating pan gives even spice coating where the coating itself is the product. For grinding your own spice blend, a multipurpose pulverizer lets you control the masala instead of buying it in β which is usually where a pickle brand's identity actually comes from.
On the oil: mustard oil is traditionally heated to smoking point and then cooled completely before it goes on the pickle. Heating removes the raw pungency; adding it hot part-cooks the vegetable and softens the pieces.
5. Pickle filling machine
Pickle is a thick, chunky, oily mix, so a liquid filler will not cope. A paste filler is built to move heavy product and hold a consistent fill weight, which matters for both costing and your declared net quantity.
Fill so that oil covers the solids, and leave proper headspace.
6. Foil sealing, capping and coding
- Induction foil seal under the lid with a manual foil sealer or an electric hand sealer. This is your tamper-evident seal and your leak barrier β important, because oil finds every weakness in a closure.
- Cap the jar with a pneumatic lug capping machine for lug-cap jars.
- Pouches for sachet and sample packs seal on a band sealer.
- MRP, batch, manufacture and best-before on every pack with a price codder. This is a legal requirement under packaged commodity rules, not an optional extra.

Remember that curing takes days. Your real constraint is curing capacity β how much product you can hold mid-process β not how fast the cutter runs. Plan tank and container space accordingly.
Pickle is also seasonal at the input end: mango in summer, chilli and lemon at their own times. The washer, cutter and mixer carry across all of them, and the same machines handle chutney and masala blending in between.
Licences and labelling
You will generally need an FSSAI licence β registration, State or Central depending on turnover and capacity β plus GST, Udyam (MSME) registration and a local trade licence. Most brands register a trademark before printing labels, which is far cheaper than rebranding later.
Labels for packaged food must carry the name, ingredients, net quantity, MRP, batch number, manufacture and best-before dates, FSSAI logo and licence number, veg mark and nutritional information. Get the artwork checked before you print thousands. Thresholds change, so confirm the current position with FSSAI or your consultant.

Cut produce is layered with salt for two to three days so osmosis draws out its internal water, and that brine is drained away. You cannot skip it. The water it removes is exactly what would spoil the pickle later, and no amount of oil or preservative compensates.
Why is mustard oil heated before use in pickle?
Heating to smoking point removes the raw pungency and any residual moisture. It must then be cooled completely before it touches the pickle β hot oil part-cooks the vegetable and leaves the pieces soft instead of crisp.
Can the same machines make chutney, murabba or masala?
