Walnut Processing Plant Machinery β Grading, Cracking & Packing

Short answer: a walnut processing line needs a peeling cum washing machine, a grader, a cracker and a packing machine. There is a fifth stage between washing and cracking that the list above leaves out, and skipping it is the most expensive mistake in this business. We will get to it.
Where the money is: whole halves, not pieces
Before any machine discussion, understand what you are actually selling. Walnut kernels are graded and priced by how intact they are β whole halves fetch a substantially higher price than quarters, and quarters more than pieces. Two units processing identical fruit can have completely different revenue purely because one gets more whole halves out of the cracker.
Almost everything below is really about protecting kernel integrity. That is the business.
The machines you need
1. Walnut peeling cum washer machine
Fresh walnuts arrive inside a green husk. That husk has to come off β it stains badly, and left on it will discolour the shell and taint the kernel. Dehulling and washing happen together here.
A 40 kg walnut peeling machine removes the husk and cleans the shell in one operation. For larger volumes a bubble washer handles bulk cleaning after dehulling.
Do this promptly after harvest. Husk left on the nut in a warm heap starts to break down, and the staining and mould that follow go straight into your grade.
2. Drying β the stage the list forgets
This is the one nobody budgets for, and it decides whether your product survives storage.
Freshly washed walnuts carry roughly 25β30% moisture. They have to come down to about 8% before cracking and storage. A 12 tray stainless steel dryer handles this in a commercial unit; a 6 tray dryer suits a smaller operation.
Three reasons it matters:
- Storage. Above roughly 8% moisture, walnuts go mouldy. Aflatoxin risk is real and it is a rejection reason for any serious buyer or exporter.
- Cracking. A properly dried shell fractures cleanly. A damp shell crushes and takes the kernel with it, so you get pieces instead of halves.
- Rancidity. Walnuts are high in oil. Heat accelerates rancidity, so dry warm and slow β around 40β45 Β°C β not hot and fast. Pushing the temperature to save a day gives you bitter kernels three months later.
3. Walnut grader
Grading before cracking sounds like an extra step. It is actually what makes the cracker work.
A walnut grader machine sorts in-shell nuts by size. The reason is mechanical: a cracker works by applying a set gap or force to the shell. Feed it mixed sizes and that setting is wrong for most of the batch β the big nuts get crushed and the small ones pass through uncracked. Grade first, crack each size at its own setting, and your whole-half yield goes up materially.
Grading also sorts your in-shell product for buyers who want it unshelled, which is often the simplest sale of all.
4. Walnut cracker
A walnut cracker breaks the shell so the kernel can be recovered.
Spend time on setup, not just on the purchase. The gap has to be tight enough to fracture the shell and loose enough to leave the kernel intact, and that setting is different for every size grade β which is exactly why the grader comes first. Run a sample, check your halves-to-pieces ratio, adjust, and only then run the batch.
Expect kernel recovery of roughly 40β50% of in-shell weight. If you are well below that, the problem is usually moisture or cracker setting, not the fruit.
After cracking, shell and kernel have to be separated. A vibratory sifter separates by size, and hand sorting on an SS working table is still standard for final kernel grading β this is where halves, quarters and pieces are separated, and it is skilled work that directly sets your realisation.
5. Walnut packing machine
A form fill seal packing machine forms, fills and seals retail pouches in one cycle. For pre-made pouches or to start small, a band sealer works. Batch and best-before coding goes on with a price codder.
Packaging matters more here than for most products. Walnut oil goes rancid on exposure to air, light and warmth, so use a proper barrier laminate and keep finished stock cool and dark. Kernels that taste fine leaving your unit can taste bitter by the time they reach a shelf if they are packed in thin film.
The order of operations
- Dehull and wash β peeling cum washer, promptly after harvest
- Dry β down to about 8% moisture, at 40β45 Β°C
- Grade in-shell β by size, so the cracker can be set correctly
- Crack β one setting per size grade
- Separate shell from kernel β sifter plus hand sorting
- Grade kernels β halves, quarters, pieces
- Pack and code β barrier laminate, cool dark storage

Drying is the bottleneck, as it is in every dehydration line β it is measured in hours while everything else is measured in minutes. When you outgrow the unit, add dryer capacity first.
Walnut is also strongly seasonal. The washer, dryer and sifter all carry over to other dry fruit and to spice or vegetable dehydration, which is the practical way to keep the unit busy through the year.
